Vegan Jalapeno Hummus
Yield: 3 1/4 cups
This one’s a bit spicy, but the capsaicin in jalapenos and other hot peppers protects against stomach cancer, skin cancer, kicks carcinogens and helps your heart by discouraging blood clots. You can go hot or mild, but remember that “cooking” in the Vitamix intensifies the taste.
- 2 15 oz. cans garbanzo beans
- 1/2 to 1 whole fresh jalapeno, seeded
- 1/4 cup lemon juice
- 1 clove raw garlic
- 1 tsp. salt (or to taste)
Jalapeños vary in heat intensity so start with ½ and increase to taste.
Place all ingredients into your Vita-Mix container in order listed. Secure two-part lid on the Vita-Mix and select VARIABLE, speed #1. Turn on the Vita-Mix and quickly increase speed to #10; then to HIGH. Run machine for 1 minute or until smooth. If necessary, use the tamper to push the ingredients into the blades while processing.
Roasted Red Pepper Vegan Hummus
This vegan hummus recipe comes with great color, incredible taste and is low in fat. The red pepper provides as much vitamin C as two whole oranges and garbanzo beans and garlic team up to steady blood sugar, lower cholesterol, and slash the risk of cancer and heart disease. You can also use fresh red, orange, yellow or purple red peppers. Simply brush olive oil on the peppers, sprinkle with sea salt, pepper and rosemary and place them on the grill until the edges start to brown.
- 2- 15 oz. cans garbanzo beans
- 1- 12 oz. jar roasted red peppers, in water
- 1/4 cup lemon juice
- 1 clove raw garlic
- 1 tsp. salt (or to taste)
Place all ingredients into your Vita-Mix 5200 container in order listed. Secure two-part lid on your Vitamix and select VARIABLE, speed #1. Turn on the Vitamix-Mix blender and quickly increase speed to #10; then to HIGH. Run machine for 1 minute or until smooth. If necessary, use the tamper to push the ingredients into the blades while processing.
