Carrot Ginger Tofu Soup

Yield: 5 cups (1.2 L)
Speed: Variable to High
Time: 3 to 4 minutes

  • 2 cups carrots
  • 1/4 (18 g) small onion
  • 4 small garlic cloves
  • 2 tablespoons (30 mL) oil
  • 1/2 teaspoon salt
  • pinch white pepper
  • 1 tablespoon fresh ginger, peeled
  • 1/3 cup lite silken tofu
  • 2 cups (480 mL) low sodium vegetable stock

Place carrots, onion and garlic in your Vitamix 5200 container.  Secure 2-part lid on the Vitamix.  Select VARIABLE, speed #1.  Turn on the Vitamix and quickly increase speed to #4 or #5.  Run for 10 seconds or until chopped. Put the oil into a small pan and sauté chopped ingredients until onion is clear and carrots are tender.  Add a little broth, if needed.

Place all ingredients into the Vita-Mix container in order listed. Secure 2-part lid.  Select VARIABLE, speed #1.  Turn on machine and quickly increase speed to #10; then to HIGH. Run machine for 3 to 4 minutes or until smooth and hot.  Serve immediately.

Curried Carrot Soup

Yield: 4 cups (960 mL)
Speed: Variable to High
Time: 4 to 5 minutes

  • 6 (360 g) medium carrots, cut in large pieces
  • 2 cups (480 mL) low sodium vegetable stock
  • 1 (70 g) small onion
  • 1/2 cup (120 mL) plain soy, hemp or almond milk
  • 2 teaspoons curry powder

Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid.  Select VARIABLE, speed #1.  Turn on machine and quickly increase speed to #10; then to HIGH.  Run for 4 to 5 minutes or until steam escapes through lid.  Serve immediately.

Note: Serve plain or over steamed carrots.

Apple Butternut Squash Soup

Yield: 5 cups (1.2 L)
Speed: Variable to High
Time: 5 to 6 minutes

  • 3 cups butternut squash, peeled, seeded, and cubed
  • 1 (200 g) large apple, quartered
  • 1 tablespoon olive oil
  • 1/4 (18 g) small onion
  • 1/2 clove garlic
  • 1/4 cup whole wheat flour
  • 1/4 teaspoon thyme
  • 1/8 teaspoon salt
  • 10.5 ounces (315 mL) low sodium vegetable broth

Steam squash in steamer or microwave.  Saute onion and garlic in butter until onion is clear and tender. Set Aside.

Place flour, thyme, salt and broth into your Vitamix container and secure the lid. Select VARIABLE 1. Turn on machine and quickly increase speed to VARIABLE 10; then to HIGH. Blend for 5 to 6 minutes or until mixture starts to thicken.

Remove the lid plug and carefully add squash, apple and onion mixture. Replace the lid plug. Run for 30 seconds. Serve immediately.

Black Bean Soup

Yield: 7 1/2 cups (1.8 L)
Speed: Variable to High to Variable
Time: 6 to 7 minutes

  • 3 cups (720 mL) low sodium vegetable stock
  • 2 cups canned, drained and rinsed black beans (1/2 reserved)
  • 2 cups canned, drained and rinsed chickpeas (1/2 reserved)
  • 1/2 cup onion, cooked
  • 3 cloves garlic, roasted
  • 3 tablespoons (45 mL) lime juice
  • 1 (15 g) jalapeno pepper, seeded
  • 1/4 cup red pepper, diced (reserved)
  • 1/4 cup green pepper, diced (reserved)
  • 1/4 cup yellow pepper, diced (reserved)
  • 1/4 cup scallions, chopped (reserved)
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • salt and freshly ground black pepper, to taste

Place all ingredients in container in order listed int your Vitamix. Secure the 2-part lid on the Vitamix. Select VARIABLE, speed #1. Turn on the Vitamix and quickly increase speed to #10; then to HIGH. Run for 6 to 7 minutes. Reduce speed to VARIABLE, speed #4. Add reserved ingredients. Run for additional 10 seconds. Serve immediately.

Creamy Tomato Soup

Yield: 4 cups (960 mL)
Speed: Variable to High
Time: 5 to 6 minutes

  • 1 (110 g) medium onion, chopped
  • 2 teaspoons (10 mL) olive oil
  • 1 cup (240 mL) soy milk
  • 10.5 ounces (300 g) firm lite silken tofu
  • 1 (180 g) large tomato, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic, chopped
  • 1 teaspoon fresh basil, chopped
  • 1/2 teaspoon white pepper

Saute onion in oil for 3 minutes or until onion is transparent.  Place all ingredients into the Vita-mix 5200 container. Secure the 2-part lid on the Vita-mix. Select VARIABLE , speed #1. Turn on the Vitamix and quickly increase speed to #10 ; then to HIGH. Run for 5 to 6 minutes or until heavy steam escapes through lid opening. Serve hot or chilled.

Chopped Vegetable Soup (Family Size)

Yield: 14 cups (3.4 L)
Speed: Variable
Time: 5 to 10 seconds

  • 3 cups tomatoes
  • 1/2 head medium-sized cabbage, quartered
  • 1 cup raw carrots
  • 2 ribs (80 g) celery, cut in half
  • 1 (110 g) medium onion, quartered
  • 1 to 2 tablespoons frozen spinach, thawed
  • 4 cups (960 mL) low sodium vegetable stock
  • 1/8 teaspoon white pepper
  • pinch of rosemary
  • 1 small clove garlic (optional)
  • water

Place all ingredients in Vita-Mix container and cover with water. Secure 2-part lid on the Vita-mix. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #3 or #4. Run for 5 to 10 seconds or until vegetables are chopped. If necessary, use the tamper to press any ingredients into the blades while processing. Pour ingredients into a large soup pot. The Wake Me Up Smoothie

vitamix 5200 smoothie

For best results, use a Vitamix to make this shake.

  • 2 cups of water
  • 1 tbsp of tahini
  • 1 oz of aloe vera gel
  • 1 oz goji berry juice or a handful of soaked goji berries
  • 1/3 of a banana (frozen for extra creaminess)
  • 1/4 cup frozen cranberries
  • 1/2 cup frozen blueberries
  • 1 cup of frozen strawberries
  • 2 tablespoons of coconut oil
  • 2 tablespoons of bee pollen
  • protein powder

Blend the water and tahini.  Add all the rest of the ingredients, except the coconut butter and strawberries.  Blend.  As the blender is running, pour in the coconut oil (if you don’t do it while the blender is running, the butter will harden in a clump). Continue blending and add the strawberries until desired thickness is reached.  Top with chia seeds.

This recipe can be for one hungry person or 2-3 people.

Vegan Caribbean Wild Rice Recipe

You will need the following ingredients to make vegan Caribbean wild rice recipe.  This vegan wild rice recipe will serve 6 people and keeps for 2-3 days in the fridge.

  • 1 cup wild rice
  • 1 med. red onion, chopped finely (white onion would be good, too)
  • 2 large tomatoes (or 4 medium), chopped
  • 2 large red ( or orange) bell peppers, chopped
  • 2 large yellow bell peppers, chopped
  • 1-1 1/2 cups freshly ‘grated’ coconut (Shred the coconut meat from two young coconuts, and serve the coconut water with your meal)
  • 2/3 + cup coconut cream
  • 2 tsp. chili powder
  • 3 small garlic cloves, pressed or minced
  • 2 tsp. ground coriander
  • 1 tsp. ground brown mustard
  • 1 to 2 tsp. lime zest, optional
  • 1 lime, juiced
  • Nama Shoyu and/or Celtic sea salt (to taste).
  1. Soak 1 cup wild rice for 36-48 hours, changing the water, daily. Then sprout for 2-6 days, until chewy, rinsing three to four times each day. (It is possible for the rice to mold if: you don’t change the water often enough; or the air is very moist or really hot.)
  2. When the rice is ready, finely chop the onion, tomatoes, and red and yellow peppers, and grate the coconut. Mix together in a large bowl and add in the wild rice, which will have expanded to approx. 3 cups.
  3. In a separate bowl, mix the coconut cream, lime juice (and zest, if using), pressed garlic, spices and seasoning. Pour over the wild rice and vegetables, and toss well.

Serve the vegan Caribbean wild rice with the coconut water from your freshly grated coconuts.

MMmmm Vegan Apple Strudel Cookies!

This recipe for apple strudel vegan cookies is so so good. Be careful though because this recipes only makes about 10 vegan cookies. To make sinfully delicious apple strudel vegan cookies you will need a the following ingredients:

Ingredients

  • 1 cup flour
  • 3-4 crushed up vegan graham crackers (this makes the cookies crunchy like pie!)
  • 1 organic apple chopped up into small pieces
  • 1 tablespoon ground cloves
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 cup soy, hemp or almond milk
  • 1/2 cup soy based margarine
  • 1/2 cup unrefined sugar
  • 1 dash of salt

Directions

  1. To make the apple strudel vegan cookies, preheat oven to 350 F.
  2. Melt the margarine, “milk”, and sugar in a saucepan on low heat until the mix is completely dissolved.  Pour the contents into a in mixing bowl and add the apple pieces and graham crackers.  You want to add these first so that the hot mixture softens up the cone and the apple.  Slowly pour in flour as you in the mix, cloves, cinnamon, baking powder and finally the dash of salt.
  3. Divide the mixture, shape them into cookie shapes and bake them for 10- 15 minutes or until they are golden brown and crunchy.  Enjoy!

Everyone has their own variation of a vegan cheesecake recipe.  This is our world’s most delicious vegan cheesecake recipe. To make it you will need:

  • 12oz silken tofu
  • ½ cup soy, hemp or almond milk
  • ½ cup raw sugar
  • 1 tsp vanilla extract
  • ¼ cup maple syrup or agave nectar
  • 1 9″ graham cracker crust
  • a box of fresh organic strawberries

Directions

  1. Preheat the oven to 350°F.  Wrap the tofu in a paper towel and gently squeeze excess moisture out.  This will help keep the final product from being runny.
  2. In a blender, combine the tofu, choice of milk, sugar, vanilla extract and maple syrup or agave nectar.  Blend until smooth.
  3. Pour the blended mixture into the pie crust and smooth the top with a spatula.
  4. Bake for 40-45 minutes.
  5. Remove from vegan cheesecake from the oven and place it on the counter to cool.
  6. Place it in the fridge when the vegan cheesecake is cool and chill overnight or for at least 10 hours
  7. Top the entire vegan cheesecake with strawberries.

Vegan Chocolate Cake Recipe

Vegan chocolate cake is super easy to make and a vegan chocolate cake with a recipe is even easier!

You will need:

  • 1 1/2 cups organic, unbleached flour, sifted (regular flour works)
  • 6 tablespoons organic cocoa powder, sifted (regular cocoa works)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup evaporated cane juice (organic sugar) (regular sugar works )
  • 1/4 tsp salt
  • 5 T canola oil (may substitute safflower oil)
  • 2 tsp raspberry vinegar *optional
  • 1 tsp vanilla extract or 1/2 tsp almond extract
  • 1 1/4 cup vanilla soy, hemp or almond milk (if batter seems too thick, add more)
  • fresh berries of choice – blackberries, raspberries, strawberries or blueberries

To make vegan chocolate cake, first:

  1. Preheat oven to 350 F
  2. Place flour, cocoa, baking powder and soda, sugar and salt in a medium size mixing bowl. Whisk to combine.
  3. Pour the soy milk, oil, vinegar, and vanilla into the flour mixture.
  4. Whisk the wet and dry ingredients together until smooth, then pour into a 9 x 9 inch baking pan. (Spray cake pan with nonstick cooking spray before pouring in cake batter.)
  5. Bake the cake at 350 F for about 25 – 30 minutes.  After 25-30 minutes test if the cake is done with a toothpick.  If the toothpick comes out clean, the cake is done!  Cool the vegan chocolate cake on a cooling rack, and then remove from pan.  If you baked the cake in a glass baking dish, the cake should slip out easily once it has thoroughly cooled.
  6. Garnish with fresh berries of your choice, cut and serve.
